Roasted Beets, Orange & Fennel Salad
Raspberry & White Chocolate Heart Cookies
Happy Valentine's Day! 

It's said a shortcut to anyone's heart goes through the stomach, so this is how SeeBe tries to accomplish just  that! Making a minimalistic but still passionate Valentine's menu by combining colors, creativity and some interesting ingredients into the dishes.

The salad to the left is incredible  together with different kinds of grilled food, but especially nice to grilled chicken or turkey. The beets are roasted in the oven with a  mix of brown sugar, olive oil and rosemary. After roasting, the beets are cut and mixed together with delicious sweet Florida oranges and Fennel which is considered as an aphrodisiac. Combined together with an oil dressing transforming new colors into a fabulous and heart healthy salad. At last topped with hazelnuts. Poor the wine please!

As an after dinner treat this year I decided to go for the more unconventional white chocolate (which really isn't chocolate at all!) combining it with fresh raspberries to achieve a romantic color into the batter. These cookies are really fast to make since they're made with baking powder.  (It doesn't have to take more than 30 min. including oven time!) The best of all: they're delicious !

Warming up for the Holidays

A well deserved pre-christmas treat after a long Sunday preparing for the holidays: Homemade oatmeal cookies & cocoa w/cream. Yummy!

The fella in the background is a Yule goat that followed me all the way to Miami, which is one of the oldest Scandinavian and Northern European Christmas symbols. The origins go as far back as to pre-Christian days. The Yule goat was part of mythical believes and looked upon as a protector of holiday preparations. As part of farm culture it was common to slaughter a goat for the holidays believed to bring good fortune.

And then there is the tradition with the Christmas buck This originated amongst pagans that worshiped the Norse god Thor (w/the hammer!) riding his chariot driven by two goats. During holidays they would disguise their appearance by dressing in a goatskin and go house to house carrying a goat head! Christian missionaries modified the tradition and divorced its meaning from Paganism. In modern times this has been a tradition carried on by children going door to door in the neighborhood in the days between christmas and new year singing christmas carols in exchange for little gifts and sweets (similarities to Halloween). An interesting aspect is that this tradition (as per Wikipedia) is still found in areas in America with large populations of Scandinavian descent such as Minnesota, Wisconsin, North Dakota and Alaska.

For the love of food, design & functionality

Here' s something to dive into for everyone that likes to indulge into food not only for the taste of it, whether you're an expert, novise or just curious. Another aspect is to look upon it as a trend, inspiration and literally food for thought in regards to design in other areas. I am sure you will find something interesting in this article from Dezeen.  Here's an example and quote:

De-stress pizza buns!


Chocolate Mocha



A chocolate mocha that soothes you through even some holiday work:

INGREDIENTS - 4 SERVINGS:
Sugar 1/4 cup
Cocoa 1/4 cup
Boiling water 1 1/2 cup
Strong, newly brewed coffee (if you dare use espresso) 1 1/2 cup
Half-and-half 1 1/2 cup

...and don't forget, just a tiny pinch of SALT
Stir sugar and cocoa together. Add just a little of the boiling water and stir to a creamy texture. Add the rest of the water, the coffee and the half-and-half and heat it up to a boiling point. Stir well and add a pinch of salt, believe it or not will enhance the other flavors. If you feel like it, decorate with some chocolate on the top. Cheers !!
